Most SB is\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003egrown on gravel, known locally as greywacke stones, and these produce\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003ehigh acid wines with high tone aromatics. Silt soils offer grapes with\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003emore restraint, a softer texture (slightly talcy), and more subdued\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003earomatics. Organic fruit which typically ripens two weeks earlier than\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003econventional, and offers more fruit concentration at lower alcs. Re.,\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003ewinemaking, a number of local producers offer a reserve wine that is\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003ewild fermented but we are the only outfit we know who employs a wild\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eferment for their standard Marlborough SB. This is both conventional\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eand organic producers. I know, ridiculous! Also, we let the SB work\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003ethrough malo which is unheard of – everyone here protects the fruit,\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eyet our aim is to tone down.\"\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eSo whereas most SB from this area is dialed up way past 11, almost\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eblinding you with those intense flavors (you know, the cat pee, grass,\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003ejalapeno, grapefruit, etc.), the Deep Down approach is to ‘turn the\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003evolume down’ so that no single character shouts out and demands\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eattention.  Because they believe that the balance of fruit\/acid is key\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eto enjoyment and digestibility. We couldn't agree more, and love that\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eyou get the classic NZ terroir in this wine, but it isn't\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eone-dimensional or overwhelming.  It smells lovely and aromatic,\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003etropical fruit and basil.
